I thought I would give you a good recipe for using that leftover roasted chicken you may have in your refrigerator. This recipe uses spinach and arugula as well.
It is a fresh salad with wonderful ingredients like strawberries, blueberries, and almonds. It also has a wonderful apple cider vinaigrette that is just amazing with this salad.

The Roasted Chicken
I am always looking for a way to use leftovers that is why I love this recipe so much it can use up all that leftover roasted chicken you have been needing to use and make it taste amazing as the star of this dish.
If you don’t have any leftover roasted chicken then you can either use part of a rotisserie chicken or you may want to bake some chicken up for this wonderful salad. You will not be sorry that you did.
It is a wonderful brunch dish and would be a welcome addition to any luncheon or garden party. I usually use the breast for this salad but if you are partial to dark meat then you may use that.
I shred my chicken so it is not in big chunks. I like a salad that is easy to get into your mouth and not big and chunky. Because the chicken is the protein of the salad I add a fair amount it mixes well with all the other flavors and gives you that pop in your mouth.
I love the taste of fresh greens in a salad this one has baby spinach arugula and baby kale the mixture of these greens give the salad a peppery fresh taste that you will love.
I always chop my green into small bitesize pieces. I do this because I find it easier for people to eat and enjoy the salad. I know people that like bigger chunks and if you are one of those people then, by all means, you may leave them bigger.
I love the health benefits of the greens in this salad. baby spinach is bursting with vitamins and minerals to help your skin, eyes and body look better as well as the antioxidants to help you feel better. Spinach may also help prevent cancer and other diseases. The vitamins and minerals they contain are K, C, E, the B vitamins, Calcium, Potassium, and Magnesium, Copper and Iron.
Arugula is very similar to baby spinach in the vitamin and mineral category and it just boosts the amount and health benefits to add it but the best reason is the taste. It adds a slight peppery flavor to the salad and is good when added to spinach and kale together these three are a great superfood for detox and adding well-needed vitamins to your diet. Arugula is also a great source of fiber.
Kale is a wonderful green that may help lower blood glucose levels and has great antioxidants that help your body get rid of toxins. It has also been shown to lower cholesterol and may help with cardiac disease. When added to spinach and arugula it becomes a superfood detox that is packed with vitamins and minerals and increases fiber into your diet.
This salad contains several fruits that are not only nutritious but also tastes amazing when combined with the other ingredients. The flavors just go together and make this salad a joy to eat. From the Red delicious apples to the cran raisins it is all about adding another layer of flavor.
Here is a bit about the different fruit from a nutritional standpoint. The red delicious apples are loaded with antioxidants that may help our body with cancer, heart disease, Alzheimer’s and diabetes. That is why the old saying ” An apple a day keeps the doctor away” is true.
Strawberries are excellent sources of Vitamin C and B they are also high in antioxidants and are great for heart disease as well as diabetes.
Blueberries are the best antioxidants they are high in nutrients and may reduce DNA damage which may help in aging and disease. They help lower cholesterol and blood pressure. They are the best food you could eat.
Cran-Raisins are great as an antimicrobial fruit, they also contain antioxidants and vitamins and minerals and fiber. They have been known to help with kidney infections and bladder problems. If you need to know where to get them I get mine here
The fruits that I have chosen to be in this salad when added together creates not only a great natural detox but also adds a great flavor profile of sweet and slightly sour flavor.
The Nuts And Cheese
The nuts and cheese in this recipe are the two things that make this salad interesting. The nuts lend a crunch whereas the cheese adds a creamy texture, both adding just a little more flavor to round out this scrumptious salad.
The Almonds are just the thing to add a bit of texture to the salad, and with their mild nutty flavor, they are oh so good. Almonds also contain fiber healthy fats and vitamins and minerals your body needs to stay healthy. They help lower cholesterol and help you maintain a healthy heart.
Bleu Cheese has been linked to heart health and may aid in the prevention of osteoporosis, due to the rich calcium it has. It is known for its pungent flavor and offsets the fruit in this salad. You can use Fetta if you cannot eat the bleu cheese but you do lose some of the flavor profile that you are trying to build in the salad.
The dressing is made from apple cider vinegar, olive oil, honey, lemon juice, and spices. You could make this ahead of time and shake often to allow the spices to get into the oil well. If made ahead of time refrigerate until use.
The flavor of this dressing mixed with the salad makes all flavors meld together and turns them into a flavor bomb that is just waiting to go off in your mouth. Dripping with goodness that you just have to try.
Chicken Delight Salad
- 2 Chicken Breast Roasted and Chopped
- 8 Cups Baby Spinach Chopped
- 4 Cups Arugula Chopped
- 4 Cups Baby Kale Chopped
- 1 Large Red Delicious Apple Chopped
- 1 Cups Strawberries Halved
- 1 Cups Blueberries
- 1/2 Cups Cran-raisins
- 2/3 Cups Bleu Cheese Crumbled
- 1 Cup Almonds Sliced
- 6 Tbs Olive Oil Organic
- 3 Tbs Apple Cider Vinegar Organic
- 2 Tbs Honey Organic
- 4 Tbs Lemon Juice Fresh
- 1/4 tsp Cayenne Pepper
- 1 Tbs Greek Seasoning
- 1/4 tsp Smoked Paprika
- 1 tsp Sea Salt Pink Himalayan is best
- Mix all salad ingredients together toss gently
- Mix salad dressing ingredients together and shake well.
- You may dress the salad before serving or at table toss gently until the salad is coated with dressing
Change It Up
Everyone has their favorite salad ingredients. The ones they just love together. If you need to change the ingredients here you may substitute for your own that you love. Maybe you love butter lettuce or some other green that’s okay use it maybe you have a favorite fruit instead of the ones here try it and maybe you like pecans better than almonds go ahead.
I love to eat my salad with crusty bread like the one I make here. The bread helps to bring out so much flavor and as always it is gluten-free, I usually brush it with olive oil and grill it just slightly.
