Mother’s Day Breakfast in a Cup

I thought I would help you with making a great Mother’s day breakfast. This is a kid and husband friendly recipe that you can make by using these easy step by step instructions. This breakfast in a cup is easy with few ingredients and only a little effort, and it also tastes great.

 It has fluffy scrambled eggs with cheese and bacon bits and you can add or take away the ingredients that she likes to make it your own. The taste is similar to a quiche with none of the pie crust makings.

The wonderful thing about this breakfast is the crust that is made from tater tots( hashbrowns will work too). It makes a great breakfast that is light and tastes like bacon eggs and hashbrowns all in one single muffin-like cup.

So have a seat and let me tell you all about this wonderful Mother’s day delight. I am going through this step by step for you to help you make a great meal for Mom.

Before we begin making your Mother’s Day Breakfast

Before you begin to cook you need to gather everything you need for your Mother’s Day breakfast. Here is a list of supplies you will need to make this meal.

  • Muffin Pan – The recipe I am giving you is for a 12 cup muffin pan. That is what I use when making these.
  • Medium or large bowl- I use a medium mixing bowl but if you think you need more room you can use a large one.
  • Whisk, or fork for mixing- most of the time I just use a fork but some people find it easier to use a whisk or a hand mixer.
  • Cup- this is for pouring it can be a measuring cup or any kind of cup that you can control to pour into the muffin cup

The First StepThese are tater tots for the crust

The very first thing to do is turn on the oven and preheat to 375°. 

Then you get a muffin pan and oil the inside with a basting brush or a paper towel with oil on it. Place tater tots in each muffin cup. You will need two or three depending on how deep your muffin tins are then push them into each muffin cup covering the bottom and sides of the muffin cup.

They will form the crust of the cup and make a crunch on the bottom that is just amazing. Don’t worry if it is a little thick it is alright. It will be good for a base of your Mother’s Day breakfast.

The next thing is to take the eggs and crack them into a bowl big enough to hold all the eggs, milk of your choice, and salt.

The bowl would need to at least be a medium-size bowl with enough room to stir the ingredients all together. 

Use the fork or whisk to beat them until all the yellow is mixed well into the white and the milk is mixed good into the eggs.

The Third Step

This step is to take the egg mixture and pour it into the muffin cups by slowly filling the muffin cup to about 3/4 of the way full. 

You can use a measuring cup or a plastic glass or whatever is easier for you to control the pouring process. You need to make sure it isn’t too full so you can add the bacon bits and top with cheese. do this for all the muffin cups. 

Now after all the muffin cups have the egg mixture in them add bacon or your favorite breakfast meat chopped up into small pieces ( you can skip this step if you don’t eat meat). 

Now add your favorite shredded cheese. you can skip this if you don’t eat dairy.

You may want to add some other things but make sure you cut them into small pieces. Some things you may want to add are mushrooms, onions, peppers, tomatoes, or spinach.Breakfast in a cup.

Then place in the oven and bake for 20 to 30 minutes until the middle is not liquid. Take one out and make sure the crust is golden brown and crunchy like a crust should be for a pie.

I hope this has helped you with what to make Mom for breakfast. It is easy and doesn’t take that long to make. You can have it made before she wakes up and maybe even do the dishes for her.

 This would go well with my mixed up fruit salad. You could make the fruit salad ahead of time and then surprise her that it was for this meal.

 Add a glass of her favorite juice or you could make my sunshine smoothie and you have a meal fit for a Queen, and that is what it is all about showing your mom how much she is loved.

  • 1 Tablespoon Olive Oil (To grease the muffin pan)
  • 24 to 36 Whole Tater Tots (Two or three per muffin cup depending on how deep the cup is.)
  • 6 Large Farm Fresh Eggs
  • ½ Teaspoon Salt
  • ¼ Cup Milk (of your choice)
  • 12 Teaspoons Bacon Bits (one teaspoon per muffin cup)
  • 12 Tablespoons Shredded Cheese (one tablespoon per muffin cup)
  1. Preheat oven to 375°

  2. Grease the muffin cups with olive oil using a pastry brush or a paper towel.

  3. Place two or three tater tots, depending on how deep the cup is, in the muffin cups. Mash them down and onto the sides to form a crust.

  4. In a bowl whisk the eggs, salt, and milk. Mix until eggs seem bubbly and light yellow milk will not be seen at this point.

  5. Pour the egg mixture in a cup, and pour into muffin cups on top of tater tots until The muffin cup is ¾ full

  6. Put a muffin pan in oven bake 20 to 30 minutes until eggs are set and don't jiggle. Take out of the oven and serve.

You may add other ingredients to the muffin cups such as spinach, mushrooms, onions, peppers, and so on but remember to decrease the amount of egg mixture so that it doesn’t overfill your muffin cups.
